Chickpea Bunny Chow

Chickpea Bunny Chow, the most appropriately named dish on the menu for the Rabbit Food Blog. This is South African street food dish proper comfort food for colder evenings (especially if you make the homemade bread). If you use dried chickpeas you can make your own aquafaba (vegan egg replacement).

Ingredients for Chickpea Bunny Chow

1 Soda Bread or equivalent

200 g Dried Chickpeas
(You will need to begin preparing these 12 hours in advance)

400 g Tinned Chickpeas

3 Cardamom Pods

1 Cinnamon Stick

4 Onion Cubes or equivalent

4 Garlic Cloves

6 cm Ginger

2 Potatoes

2 tbsp Curry Powder

2 Large Tomatoes

1 Spring Green


Optional – Other veg in fridge that needs using

We had some wild mushrooms and some leek.

Creating Chickpea Bunny Chow

Phase 1

  1. Wash your hands!
  2. 12 hours prior to making Bunny Chow – Measure out 200 g Dried Chickpeas into a pan that you have a lid for
  3. Cover with water and bring to to the boil
  4. Turn off heat and put the lid on, leave for 12 hours
  5. If you want to make Aquafaba, drain the water into another pan and reduce the water by 1/3 (this is not necessary for the dish). Aquafaba (works as a vegan egg replacement ), cool down and store in the fridge
  6. This stage can be achieved quicker with tinned Chickpeas if in a hurry. The water in the tinned chickpeas is also Aquafaba
  7. Arrange a time to make bread or have a fresh vegan cob ready bought

12 hours later…

Phase 2

  1. Wash your hands
  2. Take your 4 Onion Cubes from the freezer or dice your onion
  3. Dice your 2 Potatoes (unpeeled) & 2 Tomatoes into cubes (roughly Chickpea sized)
  4. Peel & grate 4 Cloves of Garlic & the 6 cm Ginger
  5. Roughly chop the Spring Greens & any other Vegetables you are using

Phase 3

  1. Heat a little oil in a Karahi or Saute Pan and chuck in the 1 Cinnamon Stick & the 3 Cardamom Pods
  2. Then add the Onion, Garlic & Ginger
  3. Stir for 3-4 minutes to release all those flavours
  4. Add a couple more tbsp of Oil here then the Potatoes & Curry Powder
    (If you prefer a hotter version, add a chopped fresh/dried chilli or some chilli powder)
  5. Cook the Potatoes for a good 10 minutes, often stirring
    (If you are adding any heavy veg such as carrot add at this stage)

Phase 4

  1. Add the Chopped Tomatoes & Chickpeas & cook for a further 5-10 minutes
  2. At this point prepare your Bread by hollowing out some of the centre leaving some Bread on the bottom to soak up the sauce. Pre-cut into 4 to make it easier to share.
  3. Then add the Spring Greens and any Lighter Vegetables such as Mushrooms can be added here
  4. Fill a Jug of Water & pour in a few glugs at a time whilst stirring, this will create a sauce thickened with the potato
  5. When you are happy with the consistency check for seasoning
  6. Serve on a large plate to share between you & your loved ones.
