Caramelised Onion Soup & Onion Ice Cubes

Caramelised Onion Soup has to be my favourite soup, it is so simple but so rich in flavour, this version is based on a very popular Ivy Dish that I made by the bucket load during my time there.
The Onion Cubes are an excellent addition to so many dishes, they will feature in a few recipes on The Rabbit Food Blog. You will need a Silicone Ice Cube Tray, a Slow Cooker or Cast Iron pan with lid such as a Le Creuset.
Ingredients for Caramelised Onions
Makes 15
2 tbsp of your preferred Oil
4 Large Onions
Creating Caramelised Onions
Prep Time 5 minutes
Cook Time 8 hours
- Put Oven onto Slow Cook/Lowest setting using Gas Mark S or 1/2(half)
- Peel and finely slice 4 Large Onions
- Put the sliced Onions into your Cast Iron Pan or Slow Cooker & mix in the 2 tbsp of your preferred Oil
- Put on the lid & cook for 8 hours
- After taking out stir give them a good stir
- If making the cubes, let the Caramelised Onions cool down and then divide them into the ice cube tray and place them into the freezer (the Onions must be cooled before going into Freezer!)
- If using Caramelised Onions to make Soup leave them in pan and follow instructions below
Ingredients for Caramelised Onion Soup
Serves 4
1 batch of Caramelised Onions (as above)
2 tbsp Fresh Herbs such as Thyme or Rosemary (or dried)
3 Garlic Cloves
200 ml Red Wine
1 tbsp Tomato Puree
2 tbsp Flour
Veg Stock 1.5 Litres
Creating Caramelised Onion Soup
Prep Time 5 minutes
Cooking time 45 minutes
Phase 1
- Finely chop 2 tbsp Fresh Herbs
- Add Fresh Herbs or Dried Herbs to the Caramelised Onions
- Grate the 3 Cloves Garlic into the pan
- Put on a medium heat and stir for 2 minutes
- Pour in the 200 ml Red Wine and let reduce until no longer visible
Phase 2
- Add 1 tbsp Tomato Puree and stir for 1 minute
- Put 2 tbsp Flour in a fine sieve & sift into the pan
- Stir in the Flour
- Slowly incorporate the stock 500 ml at time whilst continuing to stir
- Serve with fresh bread such as our Easy Vegan Soda Bread
