How to make Vegan Pancakes

These lovely little pancakes are great for stacks with blueberries & maple syrup. This recipe makes roughly 30 which you can store in the fridge and heat up in the microwave on those busy mornings. A good non-stick pan is essential. Here is how to make vegan pancakes.
Ingredients for vegan pancakes
- 2 Ripe Bananas
- 2 tbsp oil
- 1/2 Lemon
- 200g Wholemeal Bread Flour
- 1 tsp Baking Powder
- 1 pinch salt
- 500ml Soya Milk (sweetened)
To serve
- Blueberries (I used frozen ones defrosted)
- Maple syrup (or golden syrup)
How to make Vegan Pancakes
1. Wash your hands
2. Mash the Banana until there is no lumps

3. Add the Oil and Lemon Juice




4. Then add the Flour, Baking Powder and Salt and stir
5. Stir in 100ml milk to loosen up the Flour mix.




6. Then a further 100ml Soya Milk




7. Now slowly whisk in the rest of the Soya Milk. The batter should be smooth with cream like consistency.




8. Warm the pan over a low heat
9. With a palette knife (or something similar) at the ready, drop a large spoon of the mixture into the pan staying clear of the sides
10. It roughly takes 45 seconds for the first side, a few bubbles will form on the surface. Be really gentle with the palette knife not to scratch the pan, if you have a good non-stick pan the pancake should come away easily




11. Flip it over and cook for roughly 15 seconds. Remove and put on a cooling rack (or serve if serving straight away)




12. Every time you cook a Pancake you need a clean pan. Have some kitchen towel soaked with a little oil in case some mix has stuck to the pan. If this keeps happening it is probably that non-stick surface has been damaged in some way




13. Warm the Pancakes for 10 seconds in the microwave and the. stack with layers of Blueberries and drizzle over Maple Syrup
