Kala Chana Masala

Kala Chana Masala or Black Chickpea Curry is a very simple but effective recipe using items from the dry store. You can of course substitute the Black Chickpeas for Normal Chickpeas or Dried Chickpeas that will need to be soaked the night before. I have never tried Black Chickpeas & were actually a recent substitute for another item I had ordered. Therefore, I looked up a recipe & found this on The Endless Meal. The Black Chickpeas are a little firmer with a nuttier taste and texture than traditional Chickpeas. Remember if you cannot get some ingredients during this time, improvise with what you have.

Ingredients for Kala Chana Masala

Serves 5

2 tbsp of your preferred Oil

1 Onion or 4 Onion Cubes

4 cm Ginger

4 Garlic Cloves

2 Green Chillis

1 tsp Mustard Seeds

1 tsp Cumin Seeds

2 tbsp Tomato Puree

2 tsp Ground Coriander

2 tsp Garam Masala

1 tsp Turmeric

800g Chopped Tomatoes (2 tins)

1600g Kala Chana (4 tins)

1 tsp Nigella Seeds

2 Curry Leaves

1 Lemon

Optional:

Basmati Rice

Fresh Coriander

Creating Kala Chana Masala

Phase 1
  1. First & Foremost Wash your Hands
  2. Drain the 1600g Kala Chana and set aside
  3. Slice 1 Onion
  4. Peel & Grate the 4 cm Ginger and 4 Garlic Cloves
  5. Deseed & finely slice the 2 Green Chillis
  6. Pour 2 tbsp of your preferred Oil to deep frying pan and put on a medium heat
  7. Cook the Sliced Onion for 5 minutes until browned
Kala Chana Masala
Phase 2
  1. Add the grated Ginger, Garlic, Chilli, 1 tsp Mustard Seeds & 1 tsp Cumin Seeds and fry for 2 minutes
  2. Then add the 2 tbsp Tomato Puree, 2 tsp Ground Coriander, 2 tsp Garam Masala & 1 tsp Turmeric, stir with a wooden spoon and cook for 5 minutes until you have a deep red paste
Phase 3
  1. Pour in the 800g Chopped Tomatoes mash them a little with a potato masher or fork
  2. Add the drained Kala Chana and stir
  3. Sprinkle the 1 tsp Nigella Seeds & lay the 2 Curry Leaves on the top
  4. Leave to simmer on a low to medium heat for 30 minutes
Phase 4
  1. At this stage cook Basmati Rice if using
  2. Check for the Masala for seasoning
  3. Serve with Fresh Coriander & Wedge of Lemon
