Vegan Soda Bread

A tasty Vegan Soda Bread that only takes 1 hour from start to finish. The crusty texture is perfect for soup. I’ve added Caramelised Onion, Thyme, Rosemary & Raisins for some wonderful flavours to compliment our Parsnip & Apple Soup.
Ingredients for Vegan Soda Bread
Serves 6
400 ml Fresh Oat Milk & Pulp
(Alternatively a Carton Oat Milk)
1 tbsp White Wine Vinegar
350 g Plain Flour
150 g Granary Flour
1 tsp Bicarbonate of Soda
1 tsp Salt
Optional:
30 g Raisins
1 tsp chopped/dried Thyme
1 tsp chopped/dried Rosemary
Creating Vegan Soda Bread
Prep time 15 minutes
Cooking time 45 minutes
Phase 1
- First & foremost Wash Your Hands
- Mix the 1 tbsp White Wine Vinegar with 400 ml Fresh Oat Milk or shop bought
- Preheat the Oven to Gas 7
- Coat a large baking tray with flour

Phase 2
- Put the 350 g Plain Flour, 150 g Granary Flour, 1 tsp Bicarbonate of Soda & 1 tsp Salt in a large mixing bowl
- Combine ingredients evenly
- Make a well in the middle and add the Oat Pulp (if using) and half of the Oat Milk
- If using the optional ingredients add them all to the centre as well
- Take a palette knife to combine the mixture
- Pour in the rest of the Oat Milk and continue to work with the palette knife until it is doughy
Phase 3
- With the flat of the knife level make the surface of dough level
- Turn the bowl upside-down onto the floured tray
- Use a long sharp knife to cut a deep cross into the top of the dough




Phase 4
- Sprinkle flour over the top and bake for 45 minutes
- When cooked leave for 10 minutes before slicing.
